BEST EXPERIENCE IN OAXACA!! You know that feeling when you ate something so good you feel kinda drunk? That was me! And, no I did not have a drink. I took a few cooking classes while in Oaxaca. This one was my favorite! It's a week later and I'm STILL THINKING ABOUT IT. It was such an honor to work with Chef Oswaldo, who is also an author of his own book! He is truly an artist and academic of his profession. Oswaldo very artfuly and mindfully has found a way to fuse the rich history of the Oaxacan cuisine with succinct explanations that traditional cooks can understand and follow (aka me: give me a recipe I can follow at home, please! But, also tell me the story). I loved how organized he was- so easy to understand and see exactly how I could do it at home. He even had a booklet for me to keep with all the recipes in it where you could take notes. Thank goodness! My brain and stomach were very satisfied by this class. And, we did the thing I wanted to do- learn how to make handmade tortillas! We also made memelitas, mole, and chocolate tameles, and other goodies. I thought I didn't like mole that much- changed my mind! So good! Thank you so much to the chef and all who made this possible. Wishing you much continued success and happiness, Oswaldo and company!

It’s always a bit intimidating to join group classes when you’re traveling alone, but they made me feel very welcome, and I really enjoyed the experience. The chef was passionate about food and Oaxaca’s rich culture. He and his sous chef were attentive, informative, and very warm. They made the entire class engaging from start to finish. I can’t wait to get home and try some of these recipes!

Unforgettable and so worth the money and time! Oswaldo put so much care into every detail. He has an impressive depth of knowledge about Oaxaca cuisine, a knack for teaching, and a warm way of hosting that makes you feel both as if you are having a luxury experience and as if you are passing time with a friend. I left with a full belly, a big smile, and a few new recipes to replicate at home.
